Hello CFNT,

My name is Artie Stevens and I have been a member since November 2011. Most of you have met my wife, Erica, and I, but since the community is growing I know that we haven’t all had a chance to get into a relationship. I want to take a few minutes and share a new opportunity that is happening at CrossFit NapTown, but first I’d like to tell you a little bit about myself.

I am thirty four years old and I have been in the food industry since I was sixteen. I graduated from Pennsylvania Culinary in downtown Pittsburgh, PA with a degree in Culinary Arts in April of 1999. I’ve been a chef at the executive level for over ten years now and cooking is definitely my passion. Most of my time in the kitchen was spent in the lovely sunshine state of Florida in cities like Ft. Lauderdale, Boca Raton, and Miami. I also opened a restaurant in Carmel in 2002 called Belleria, which was the first business to go inside of The Village of West Clay. Since moving back to Indy from Florida in 2006, God has changed the direction of my life in many ways and I am now the Foodservice Supervisor for all five Wheeler Mission locations throughout Indiana. When I learned about the Paleo lifestyle here at CFNT I have to admit I was a bit skeptical at first. My wife and I participated in our first Paleo challenge in January of this year and it was just that…”a challenge!” We quickly learned that we had to be prepared everyday with food on hand or we ran into temptations along the way. We also learned that we didn’t really eat food for nutrition but rather we ate food for comfort. For some of you, this may be the first time you have ever heard of or tried the Paleo lifestyle. Trust me when I say that it is going to be a challenge but the results are well worth it.

I would like to share with you a dream that has now become a reality. Starting Monday, April 23rd , CFNT will be introducing “Artie’s Paleo OnTheGo”. What is that? Well, I’m glad you asked! Artie’s Paleo OnTheGo is going to be our way of sharing my passion for food with our CrossFit community. I will be preparing two selections each week and bringing them to the gym every Monday morning at 9am. The food will be for sale on a cash only basis (right now) and it will be stored in the back room refrigerator. The entrees will be a full meal that is completely Paleo friendly and moderately priced. I will make sure to list the ingredients along with the name of each dish. The food will be stored in plastic, microwaveable, washable, BPA- free containers for your convenience and safety. I will be finishing the dishes at about 80% so when you heat them up they are super fresh and ready to go. My promises to you include; using the freshest ingredients, Paleo friendly oils and seasoning, continuing to grow in creativity and accepting any and all suggestions along the way. I am looking forward to serving you all and sharing my love for food with you. Diet plays a HUGE roll in our performance at the gym and I am hoping that these healthy dinners will help you overcome temptations when you are out and about.

So whether you are just trying out Paleo, not sure how to cook Paleo or just generally lack creativity in the kitchen, these meals are going to be for you. They also will help the skilled culinary vet when he or she is in a pinch for time and forgets to leave the house prepared that day. Artie’s Paleo OnTheGo at CFNT is going to be our way to serve the community and provide another level of support for people trying to better their health. I look forward to the start of this venture and I also am excited to see where it goes. Thank you for your support!

-Artie-
