"Date With a Plate" – Paleo Sampler Saturday

Paleo Sampler Saturday is today. Bring in all your Paleo friendly goodies to share with others. We will have a buffet table set up with electrical outlets ready if need be. Food can be consumed before, after, and during the 9:30am and 10:30am class.     here is the recipe for the pancakes I made!
    1/4 c almond meal
    1 t baking powder
    1/8 t cinnamon
    6 walnuts ( chopped)
    1 egg
    1/4 c coconut milk
    Mix dry , stir in wet.
    *I have made them with coconut flour as well with great results. And if you want a banana flavor use a little less coconut milk and mash in some banana. I mixed some chopped up dates in as well…basically this is the basic recipe and you can totally play with it however you want! A greek yogurt and coconut milk combo makes for an even fluffier pancake but it is less paleo of course

    What a perfect “welcome to Indy”… Great box, awesome people, new tshirt, fun WOD and you fed me and helped me stay Paleo with fantastic food. Thank you! Can’t wait to come back!
    Since I couldn’t contribute a meal, here’s my favorite chili recipe. If anyone ever comes to Connecticut, let me know…I will whip up a batch.
    Paleo Chili
    1 lb lean ground beef
    1 lb steak chunks
    1 lb pork chunks
    28 oz can diced tomatoes
    1 large onion
    2 bell peppers (chopped)
    1.5 cups of beef broth
    1/2 cup hot sauce
    2 tsp garlic powder
    1 tsp ground cinnamon
    1 tbs ground cumin
    2 tbs chili powder
    Add salt to taste
    olive oil
     
    Brown meat with chopped onions.
    Add all ingredients to crock pot.
    Cook on high until it boils then let simmer for a few hours.
